Environmental Responsibility (Environmental)
At Spoon The Boat, we understand that protecting our environment is key to the sustainability of our business and future generations. That’s why we have taken several steps to reduce our ecological footprint and promote environmentally responsible operations.
Energy management
Although the nature of the floating plant limits the possibilities, we have managed to make outstanding investments in energy management. We have replaced it with a condensing gas boiler
a 24-year-old conventional boiler, which has halved our gas consumption.
The heat from the kitchen refrigerators and freezers is collected by a heat exchanger and recovered in a modern hot water tank, which provides a significant part of our hot water production.
The ventilation of the guest and kitchen areas is provided by four separately operated modern air handlers, which use the already tempered indoor air with 97% efficiency and preheat or cool the fresh air.
A state-of-the-art air-to-water heat pump is used to generate a significant proportion of the energy required for cooling and heating. Window blinds protect the living spaces from significant heat loads during the summer, which air conditioning use can be significantly reduced. By installing building control systems, unnecessary energy consumption due to inattention, overheating or overcooling of certain systems can be significantly reduced e.g. air handlers, etc. By coordinating these investments we have managed to reduce our energy consumption by more than 45% compared to the previous period.
Water management
To protect water as a precious resource, we have introduced a number of measures to significantly reduce water consumption. These include the installation of water-saving devices, information campaigns to promote water-conscious behaviour. Also outside the Spoon treated Danube water, which has resulted in significant savings.
Waste management
In the area of waste management, we are committed to reducing and recycling waste. We have introduced selective waste collection, significantly reduced the use of plastic packaging, we use home-made syrups instead of fibre soft drinks and we serve filtered water instead of packaged mineral water. These steps have also reduced the significant environmental impact of transport. These measures not only reduce the pressure on landfills, but also promote environmental awareness.
Chemicals
We are committed to using environmentally friendly cleaning products. Although the restaurant industry has traditionally required harsh chemicals, today’s technologies have enabled us to use a significant amount of environmentally friendly chemicals in our operations. We pay particular attention to the use of appropriate dispensers, which eliminate the environmental impact of unnecessary concentrated mixing by providing an efficient mixing ratio.
Digitalization
Orders placed through the Chef’s Market system, developed and used by our group, are digital, no paper is needed. For those suppliers where this is possible, we use electronic invoices, reducing the use of paper for payment documentation. We issue and send orders, contracts and invoices electronically to all our customers and clients. Most documents are digitally handled in compliance with current legislation. We use a proprietary application for internal employee communication, minimising the need for printing and increasing efficiency and awareness.
Carbon emissions
We continuously monitor and assess the environmental impact of our activities to reduce carbon emissions. We are proud that our estimated annual CO2 emissions are significantly lower than the industry median, reflecting the efforts we are making to minimise our environmental impact. These results give us the incentive to continue to seek and apply innovative solutions. in the name of sustainability.
